Sensing a growing movement towards fresh, healthier foods, Meriden native Peter Vouras opened the first Freskos in early 2016 as an alternative to traditional fast food establishments. It has quickly become a favorite go-to restaurant and was voted “Best Greek Restaurant,” “Best Gyro,” “Best Salad, and “Best Mediterranean Restaurant” by CTNOW’s Best of New Haven reader’s poll. Touting the Mediterranean diet, Freskos offers fresh, authentic Greek food from souvlaki and gyro sandwiches to salads, soups and imported Greek yogurt.
Freskos stands above the competition by providing authentic Greek food in a beautiful, light-filled setting. By using the freshest ingredients like yogurt-based tzatziki, real gyro, house-made dips, imported Feta and tender grape leaves, Freskos provides its patrons with a real Greek experience. Combine that with live streaming music from Greece and it’s as if you were there.
With the restaurant business as a big part of his lineage, Peter is following in the footsteps of both grandfathers who ran several successful restaurants in Meriden and Hartford. In fact, many of the family recipes are used in making their delicious food.
Always the entrepreneur, Peter started and published his own music magazine with his friend Bill Arciprete called VoxPop after graduating from Fairfield University. The successful magazine eventually morphed into a live cable access show that provided Peter an outlet to unleash some creative characters and hone his improv skills.
From there he went moved to Manhattan and established himself as a stand-up comedian. From New York, he ended up in Los Angeles, doing more stand-up comedy and furthering his acting career. After getting married, he and his wife decided to move east to be near family. They settled in Brooklyn where Peter continued to pursue his stand-up comedy in addition to acting in TV, film, and stage.
After living in the City for a few years, they decided to make Connecticut their home. Peter purchased and took over the Huntington Street Cafe in Shelton in 2008 with the goal of transforming it to a healthy, profitable business. After completing that goal, he sold it and transitioned into restaurant consulting. It was then he realized that he had all the skill, talent and drive to open his own Greek Restaurant, and Freskos was born.
